When does a arrest go to the Grand Jury

my book keeper was arrested for theft a forgery, She had no idea this was in the works.

They made the bond $80,000. Is this usual. I paid the bill, now I worry about getting my money back.

You don't provide enough information for me to assess. State? Federal? But the bottom line is she needs to seek counsel immediately, even before the case is presented to the GJ. There are many reasons for this, but one is that a qualified, experienced lawyer will review everything and determine whether certain steps should be taken pre-Indictment (even with the GJ) to seek the best outcome. And as for getting your money back, that is to be answered by your book keeper. If she appears in court as required then your money will be safe.
